אחד הדברים שהכי מרגשים אותי זה הגינה שלי. מאז ומתמיד רציתי לגור בבית על האדמה ושתהייה לי גינת ירק. כל השיגעון הזה של גן ירק התחיל להתפתח דוקא כשגרתי בבית דירות וגיליתי את הגינה הקהילתית בכפר סבא. לקחתי לי פיסת אדמה קטנה כחלק מהפרוייקט המדהים הזה והתחלתי לגדל ירקות. מאז בעצם זה לא הפסיק.

היום במקום שבו אני גרה יש שפע אדמה . יש פה כל כך הרבה אדמה שגם אם ארצה מאוד לא אוכל להשתמש בכולה. לנו כישראלים קשה בכלל לתאר מיימדים כאלה. אבל אני תמיד זוכרת את השמחה שהיתה לי מכל ערוגה קטנה ככל שתהייה, בכל מקום שבו התגוררתי ואת העונג לקטוף, לבשל ולאכול את מה שגידלתי בעצמי, מזרע- לשתיל- לירק.

הבוקר שלי מתחיל בזה שאני פשוט פותחת את הדלת ויוצאת לגינה. לפני שאני בודקת מי חיפש אותי בזמן שישנתי, מה המצב בעולם, מי עשה לי לייקים בפייסבוק....לפני הכל! אני לוקחת את הקפה שלי לגינה ועושה סיבוב.
ותמיד, אבל תמיד, יש משהו שלא היה שם אתמול.


דבר ראשון אני עושה קטיף בוקר של כל מה שמוכן ,אז אני קוטפת צמחי תבלין ופרחים ורק אז אני מתחילה להשקות.
עם כל הכבודה אני הולכת חזרה למטבח לא לפני שאספתי ביצים מהלול.


בדרך הראש שלי כבר עובד מה אפשר לעשות מהיבול היומי. או מה יש לי במקרר מאתמול שאוכל להוסיף לו את התוצרת של היום.
אני תמיד משתדלת להשתמש בכל מה שגדל אצלי בגינה, מחפשת דרכים יצירתיות לבשל ,לאפות, לשמר, להתסיס, וליבש.


אני גם אוהבת לחשב כמה אחוזים מהאוכל שלי הם תוצרת עצמית.

גן ירק באיזור שאני גרה בו יכול להתקיים רק מספר חודשים בשנה. אפריל עד נובמבר פחות או יותר. בשאר הזמן קר פה מידי אבל גם בתרדמת החורף קורים דברים מעניינים בגינה.
הפוסט הזה הוא הראשון בסדרה שנתית שאני מנסה ליצור. אשתף אותכם לאורך שנה אחת בעולם הקסום והמרתק שלי, בהקמת הגינה, בנושא שימור זרעים, הנבטה ושתילה, במה עושים בחודשי החורף, בשפע שיש כל יום, מתכונים, ארוחות, ורעיונות לשימור, אדבר על פרחים, ירקות, פירות, חרקים, עשבי תיבול, על שלווה, השראה, אכזבה והתרגשות ומי יודע מה עוד יתחשק לי....נזרום.

(an introduction.)
One of the things that excites me the most is my garden. Ever since I can remember, I've dreamed of living in a house with land and having my own vegetable garden. Surprisingly, this passion for growing food really began when I was living in an apartment and discovered the community garden in Kfar Saba. I claimed a small plot of land as part of that wonderful project and started growing vegetables. From that moment on, I never stopped.
Today, where I live, there is an abundance of land. There is so much of it that even if I wanted to, I could never use it all. As Israelis, it's hard for us to even imagine spaces like these. But I always remember the joy I felt from every tiny garden bed, wherever I lived, and the pleasure of picking, cooking, and eating something I had grown myself, from seed, to seedling, to vegetable.
My morning begins by simply opening the door and stepping into the garden. Before I check who tried to reach me while I was sleeping, what's happening in the world, or who liked my posts on Facebook... before anything else, I take my coffee outside and walk through the garden.
And there is always, always, something that wasn't there yesterday.
The first thing I do is harvest whatever is ready. I pick herbs, flowers, and vegetables, and only then do I begin watering.
With my basket full of fresh harvest, I head back to the kitchen, but not before collecting eggs from the chicken coop.
On the way, my mind is already working. What can I make with today's harvest? What leftovers are in the refrigerator that I can combine with today's fresh produce?
I always try to use everything that grows in my garden. I'm constantly looking for creative ways to cook, bake, preserve, ferment, and dry what I grow.
I also like calculating what percentage of the food I eat comes from my own garden.
Where I live, a vegetable garden can only thrive for part of the year- from about April through November. The rest of the year it's simply too cold. But even during the garden's winter dormancy, interesting things are happening.
This post is the first in a year-long series I'd like to create. Throughout the coming year, I'll share my little magical world with you: building the garden, saving seeds, starting seedlings, planting, what happens during the winter months, the daily abundance, recipes, meals, and ideas for preserving the harvest. I'll write about flowers, vegetables, fruit, insects, herbs, and about peace, inspiration, disappointment, excitement, and who knows what else I'll feel like sharing along the way.
